Citrus fruit is best in the winter time, although many people think of fresh salads as summer fare, but this Holiday Citrus Salad will change your mind. It’s the perfect light and fresh addition to a holiday table after all the sweets and heavy winter dishes. Winter is the best season to find all the sweet and juicy blood oranges, clementines and pleasantly tart grapefruits. This salad is the best way to put them to good use.

Festive Holiday Citrus Salad

Holiday Citrus Salad with Avocado, Pomegranates

This fresh and festive salad is easy to make and great served during the holidays or the winter months when citrus is in season. It is so refreshing; the salad will be gone quickly!!

Ingredients
  

Salad Ingredients:

  • 6-8 Cups Arugula
  • 2 Blood Oranges – peeled and cut into sections
  • 1 Ruby Red Grapefruit – peeled and cut into sections
  • 3 Clementines – peeled and cut into sections
  • 1 Avocado – pitted and sliced
  • 1/4 Cup Pomegranate Arils Seeds
  • Fresh Mint – lightly chopped

Dressing Ingredients:

  • 1/4 Cup Red Wine Vinegar
  • 2 Tbsp. Roasted Almond Olive Oil or Extra-Virgin Olive Oil
  • 2 Tbsp. Honey
  • 1 Tbsp. Lemon Juice
  • 1/4 tsp. Granulated Garlic
  • 1/2 tsp. Kosher Salt
  • 1/4 tsp. Freshly Ground Black Pepper

Instructions
 

  • Place red wine vinegar in a small mixing bowl. Add the olive oil, and with a whisk, emulsify the mixture. Add the rest of the five ingredients and whisk until thoroughly mixed. Set aside.
  • Place the arugula on a platter. Add the citrus and avocado. Pour a small amount of the vinaigrette and gently tossed to combine. Add more vinaigrette, but be careful not to over dress the salad.
  • Sprinkle the pomegranates and the mint over the salad.
