Holiday Citrus Salad with Avocado, Pomegranates
This fresh and festive salad is easy to make and great served during the holidays or the winter months when citrus is in season. It is so refreshing; the salad will be gone quickly!!
Salad Ingredients:
- 6-8 Cups Arugula
- 2 Blood Oranges - peeled and cut into sections
- 1 Ruby Red Grapefruit - peeled and cut into sections
- 3 Clementines - peeled and cut into sections
- 1 Avocado - pitted and sliced
- 1/4 Cup Pomegranate Arils Seeds
- Fresh Mint - lightly chopped
Dressing Ingredients:
- 1/4 Cup Red Wine Vinegar
- 2 Tbsp. Roasted Almond Olive Oil or Extra-Virgin Olive Oil
- 2 Tbsp. Honey
- 1 Tbsp. Lemon Juice
- 1/4 tsp. Granulated Garlic
- 1/2 tsp. Kosher Salt
- 1/4 tsp. Freshly Ground Black Pepper
Place red wine vinegar in a small mixing bowl. Add the olive oil, and with a whisk, emulsify the mixture. Add the rest of the five ingredients and whisk until thoroughly mixed. Set aside.
Place the arugula on a platter. Add the citrus and avocado. Pour a small amount of the vinaigrette and gently tossed to combine. Add more vinaigrette, but be careful not to over dress the salad.
Sprinkle the pomegranates and the mint over the salad.
