Roasted Red Grapes with Fresh Thyme, Ricotta Cheese Crostini is a crowd-pleaser for sure. This is a delicious appetizer to serve guests when hosting a dinner party or sport party. The grapes melt in your mouth and when roasted, will blister and caramelize on the outside, and will be extra juicy and practically jammy on the inside.

Start with the best ingredients beginning with the bread. Go to your local bakery and pick out your favorite rustic loaf of bread, such as ciabatta, sourdough, rosemary, etc. You can make your ricotta or buy a brand that is from Italy, which is so creamy and tart all at the same time. If you grow your thyme, pick your springs or substitute rosemary. Use freshly ground pepper and local honey to mix in the Ricotta Cheese. Now all you have to do is assemble and serve!

When you have leftovers, there are many ways to use the Roasted Red Grapes. Serve the grapes as a condiment for meat or roast them alongside, such as beef, lamb, chicken, or pork. You can also spoon them over ice cream or sprinkle them on a yummy salad. Finally, toss them on a cheese plate that will make the platter shine!

Store roasted grapes in the fridge, and warm them up just before using in a 400- degree oven for about 10 to 15 minutes when ready to serve.

Ingredients
  

  • 2 C. Red Grapes
  • 2 Tbsp. Extra- Virgin Olive Oil
  • 1 tsp. Kosher Salt
  • 6 Fresh Thyme Sprigs
  • Rustic Bread – sliced into 1/2-inch thick pieces
  • 2 C. Ricotta Cheese – can be homemade
  • 1 Tbsp. Honey
  • Fresh Ground Black Pepper – to taste

Instructions
 

  • Preheat oven to 450 degrees F.
  • Spread grapes onto a non-stick sheet pan. Drizzle with olive oil and sprinkle with salt. Lay thyme leaves over top. Toss all together gently with your hands. Place pan in the oven for 7 minutes or until grapes just begin to burst.
  • Meanwhile, heat a grill, grill pan, panini maker, or toaster oven. Brush the bread with olive oil and grill the bread until nice and toasty.
  • Spread seasoned ricotta over bread, topped with the roasted grapes (along with some pan juices.) Strip the thyme sprigs and garnish on top of the grapes.
