Chocolate Covered Strawberries

Valentine’s Day is around the corner, and I think Chocolate Covered Strawberries are a must to make. I hope everyone is preparing what you would like to make. They can be made any time of the year. It can be just for yourself, your significant other, or for a party. Chocolate Covered Strawberries is an easy and simple recipe that will have everyone wanting more!

How to pick the Strawberries:

When choosing your fruit: Select ripe berries for Chocolate Covered Strawberries that are bright red (with minimal whiteness on the tips) so they are beautiful and flavorful. Take care that your strawberries aren’t too ripe because they will be mushy. Discard any strawberries with soft spots. Wash and dry strawberries VERY WELL.

Chocolate doesn’t always mean romantic love. However, a beautiful display of homemade Chocolate Covered Strawberries can communicate love from you to your mom, friends, and family. It can also symbolize happiness, celebration, and friendship.

Making the Chocolate:

First, the chocolate for the Chocolate Covered Strawberries needs to be purchased. I have two favorites I have loved throughout the years – Bittersweet Chocolate Wafer by Guittard and Bittersweet Onyx Chocolate Wafers by King Authur. I provided two links to get you on your way.

Next, we need a double-broiler. I am sharing a favorite from Nordicware, but you can also take a stainless mixing bowl and put it on top of the right size pot, and wallah, you are ready.

Place enough water in the bottom of the pan, so it’s not touching the base of the double-boiler. You don’t want to cook the chocolate. Instead, place your pieces of chocolate on top of the double-broiler and turn the heat to medium-high heat. The chocolate will not take long to melt. In the meantime, add the heavy cream, Grand Marnier, and butter. Continue stirring until melted and smooth.

Dipping the Strawberries:

First, make sure the strawberries are very dry. I like to wash the berries the day before. If they are not dry, the chocolate will not stick. Then, holding each strawberry by its stem, dip it into the chocolate mixture and coat it just below the stem. Transfer to a baking sheet and let cool. Finally, chill the strawberries for 15 to 20 minutes or until the chocolate is set.

Chocolate Covered Strawberries

  • Double-Boiler

Ingredients
  

  • 6 oz. Bittersweet Dark Chocolate* cut into pieces
  • 2-3 tbsp Heavy Cream
  • 2 tsp Grand Marnier Liqueur
  • 1 tbsp Unsalted Butter – softened
  • 1 1/2 pints Large Stemmed Stawberries

Instructions
 

  • Line a baking sheet or tray with foil or parchment paper.
  • In the top of a double boiler set over hot water melt the chocolate, stirring often.
  • Add 2 tbsp. of the cream, liqueur, and the butter and heat the mixture, stirring until smooth. If the mixture is still too thick, add the other tbsp. of cream.
  • The strawberries are ready to be covered. Holding each strawberry by the stem, dip it into the chocolate mixture, coating to just below the stem and letting the excess drip back into the pan.
  • As the strawberries are coated, transfer them to the baking sheet. Let the chocolate cool, and then cool the strawberries for 15 to 20 minutes or until the chocolate is set.
