Smoked Salmon Bruschetta

  • 1 - 3 oz. Package Goat cheese
  • 1 Tbsp. Capers - drained
  • 1/4 Cup Fresh Italian Parsley- roughly chopped
  • 2 Tbsp. Fresh Mint - roughly chopped
  • 1/2 tsp. Smoked Pepper
  • 1/2 tsp. Kosher Salt
  • 1 Fresh Garlic Clove - minced
  • 1 Tbsp. Extra-Virgin Olive Oil
  • 1 Package Smoked Salmon - split into bite-size pieces Freshly Baked French Bread - sliced in 1/2 inch slice Italian Parsley for garnish

Method
 

  1. In a small bowl, add the goat cheese plus the next seven ingredients. Mix thoroughly until well blended. Add more olive oil to make it more spreadable if needed.
  2. Place the cut French bread on a platter. Spread with the goat cheese mixture, and then place the salmon on the top. Make sure the salmon and the goat cheese are not falling outside the bread.
  3. Garnish with the Italian Parsley. You are ready to serve.
