It is such a super simple dish that you can prepare all in one saute pan dish, which makes clean up a snap, and yet it packs so much flavor!

It is gluten-free and can be easily dairy-free by changing the chicken and feta sausage to a dairy-free chicken sausage of your choice, and by skipping the grated parmesan garnish.

When our weeks get busy, I turn to this easy dinner to prepare and clean up after. All the items are easy to pick up on your way home or have stocked in your kitchen for busy weeknights.

Ingredients

  • 2 Chicken and Feta Sausage links grilled separately and cut into bite-size pieces
  • 3 Tbsp Smoked Extra Virgin Olive Oil or Extra Virgin Olive Oil
  • 1 Garlic Clove minced
  • 2 Big handfuls Torn Curly Kale Leaves washed and dried
  • 2 Tbsp Water
  • 1 15.5 ounces can – Cooked White Cannelli Beans
  • 1/2 Cup Roasted Red Peppers cut into bite-size strips
  • 10 – Kalamata Olives pitted and halved
  • 1 tsp Fresh Rosemary
  • 1 Tbsp Fresh basil
  • 1 tsp Ground Fennel Seed
  • 2 Tbsp Red Wine Vinegar
  • Kosher Salt – to taste
  • Freshly Ground Pepper – to taste
  • Red Pepper Flakes – to taste
  • Grated Parmesan – to garnish

Instructions

  1. Heat olive oil in a large heavy skillet over medium-high heat. Add the garlic, and saute for 1 minute. Add the torn kale pieces and saute with the olive oil and garlic until coated. Add the water and let the kale soften and wilt for about 3 minutes or longer if desired. Then add the grilled sausage, white beans, red peppers, and olives and warm through. Season with salt, pepper, red pepper flakes and ground fennel. Stir to meld all the flavors and cook for 2 minutes. Add the red wine vinegar to the pan and fold in the mixture.

  2. Serve in bowls with the parmesan cheese for garnish.
